It's ok...
- that it was difficult for me to go workout this week.
- that meal planning/prepping is my new favorite thing.
- that I am over this year, and by year I mean school year.
- to want to spend a ridiculous amount of money on workout clothes
- to wonder about other peoples relationships (in a non creepy way, just curious)
- that I have really long curly hair, but still believe if it gets past my butt it will magically become straight
- to stay up at night on instagram (follow me @hohodryden)
Spaghetti Squash
This is the original pin (mine totally would not have meat on it)
Another blogger posted this recipe and reminded me that I had pinned it so on Tuesday night this is what was for dinner. I told Blake I would be cooking spaghetti squash and he was excited, when I asked him to come and cut the squash in half he did and then asked where the noodles were. "These are the noodles", I said as I picked up the two halves and placed them face down on a baking pan. He was not amused and quickly informed me that he would be making his own dinner. Back to the squash, preheat the oven at 350' then when ready, put the squash in for 35 minutes. After you have taken the pan out of the oven, you take a fork and basically scratch the inside of the squash and it will be so tender that the noodle like sides almost collapse into pretty yellow noodles. I was really surprised at how much the squash after baking, looked like noodles. I covered mine with a little marinara sauce and took my first bite. Yumm-o and crunchy, I liked the crunch. I had enough left over to pack and prep for Thursdays lunch. Total calories: Squash was only 42 and the marinara was 45 so my GRAND TOTAL was only 87 calories!
