My Version

 Mine clearly look nothing like the original. I don't know if I messed up baking them or what, but they were not crunchy, they were soft-ish. Clearly they weren't that bad though, because I ate them. The instructions were bake for 45 minutes at 225'. The recipe also cautioned not to let them sit out for to long before eating them as they could get chewy. Well, I didn't let them sit for long, and they were chewy. This could potentially be a pinterest fail, but hey, I still ate them!

SPD: 41 Calorie Almond Clusters

My version:


Melt the chocolate in the microwave for 1 minute and 15 seconds. Take out and gently stir.

After placing a dollop of the chocolate on the foil, I then added the almonds.

I covered the almonds with the remaining chocolate, and popped them into the freezer for ten minutes.

Voila, they lift right off the plate! 41 calories, yum!

   I wanted to jazz it up a little and I had my first graders write a birthday letter to Dr. Seuss. We did a little review by watching Justin Bieber read The Cat in the Hat, and then discussed other books he wrote. I was pleased with the outcome and plan to keep this board up for the entire month of March.

Very delicous, truly you can't tell the difference. Used plain greek yogurt, and one packet of Hidden Valley ranch dry mix, and voila! I can't stress enough how delicious it was. Fewer calories, and better for you I feel.

Blake was a great sport about the project. He did all of it while I watched and took pictures of course.

The only thing left to do is take the tape off of the windows, and scrape off any remaining paint. I love how they turned out and am thinking I want to change the hardware now.

Its Ok Thursdays

It's ok...

- that it was difficult for me to go workout this week.
- that meal planning/prepping is my new favorite thing.
- that I am over this year, and by year I mean school year.
- to want to spend a ridiculous amount of money on workout clothes
- to wonder about other peoples relationships (in a non creepy way, just curious)
- that I have really long curly hair, but still believe if it gets past my butt it will magically become straight

Spaghetti Squash

Another blogger posted this recipe and reminded me that I had pinned it so on Tuesday night this is what was for dinner. I told Blake I would be cooking spaghetti squash and he was excited, when I asked him to come and cut the squash in half he did and then asked where the noodles were. "These are the noodles", I said as I picked up the two halves and placed them face down on a baking pan. He was not amused and quickly informed me that he would be making his own dinner. Back to the squash, preheat the oven at 350' then when ready, put the squash in for 35 minutes. After you have taken the pan out of the oven, you take a fork and basically scratch the inside of the squash and it will be so tender that the noodle like sides almost collapse into pretty yellow noodles. I was really surprised at how much the squash after baking, looked like noodles. I covered mine with a little marinara sauce and took my first bite. Yumm-o and crunchy, I liked the crunch. I had enough left over to pack and prep for Thursdays lunch. Total calories: Squash was only 42 and the marinara was 45 so my GRAND TOTAL was only 87 calories!
